Beer Bread

So now that the bread making trend seems to be mostly over, I gave it a try.

I googled for the “simplest bread to make without yeast” (because I didn't have yeast) and came across a recipe for “beer bread” which was perfect (because, of course I had beer).

Turned out pretty good and was quick and easy to make. I see myself making this more often.

And because the recipe site was an absolute shit show of advertising and SEO slop, I'm not even linking to it but just give you the gist below.

You need:

  • 350g flour
  • 1 tablespoon of baking powder (~12g)
  • 1 teaspoon of salt
  • 2 tablespoons of sugar (~30g)
  • 330ml Beer (room temperature)
  • 2 tablespoons of butter (melted)

Preheat the oven to 190°C.

Put all the dry ingredients into a bowl and gently mix them. The original recipe suggested to sift the flour, but I found shaking it into the bowl is fine. You just want to make sure it's fluffy and not in clumps.

Next add the beer. I used a boring Pilsener. More hoppy beers like IPA are supposedly too overpowering in taste.

Gently mix the dough. Don't use a mixer, don't over mix. Just gently mix with a spoon so all dry ingredients get wet. The dough will look uneven, that's fine.

Put everything into a bread form (ours is silicone, for more traditional ones, you probably want to grease it up first). Drizzle the molten butter on top.

Put it in the oven for about 35 to 45 minutes until it's properly brown and a wooden stick comes out mostly clean.

Take it out of the oven and let it cool for 5 min or so, then take the bread out of the form and let it rest. If you have a wire rack put it on there. If you don't, put some chopsticks under it, so the bottom can breathe while it cools further.

Cut and eat while still warm.
